I adore pesto! This is a very healthy sauce to try to get your kids hooked on! It is way less acidic than tomato sauces(for those with sensitive stomachs) and it is way less fattening than Alfredo.
Spinach Pesto Sauce by: Megan Cahill
Ingredients:
1/2 cup Almonds or any kind of nuts (I buy whatever is cheapest)
3 cups of Baby Spinach (much cheaper than basil)
1/2 tsp fresh minced garlic
2 tsp basil leaves
3/4 cup olive oil
1/2 cup grated parmesan cheese
Directions:
1. Place the nuts in the food processor. Chop until the nuts are well grounded.
2. Add the baby spinach and chop. (Watch carefully while using the food processor. I have found if I take my eyes off of it I either over chop or over mix something)
3. Add garlic, basil leaves and salt and pepper to taste.
4. Now, add the olive oil gradually. I turned my food processor on and gradually poured it in.
5. Finally, add the cheese.:)
Serve over veggie noodles, a good way to get in extra fiber and veggies.
